International Egg Recipe #5: Huevos revueltos con Tortilla (Scambled eggs with Tortillas)

This recipe comes all the way from our partners in Nicaragua!

  1. Take two corn tortillas, cut them by hand in small Dorito size squares or triangles and fry them in corn, sun flower or olive oil until they are a golden and crispy.
  2. Take the crispy tortillas out  of the frying pan and dry them with a paper towel until  there is little oil on them. Let them sit on top os the paper towel for a few minutes.
  3. Add some salt and pepper.
  4. Take two eggs and scramble them in a mid size recipient, add a bit of cream or milk, some salt and pepper, and scramble some more.
  5. Dry the frying pan with a paper towel,  put it back on the burner until is hot.
  6. Place back the fry tortillas in the frying pan, and throw in the raw scramble eegs on top of the tortillas.
  7. Scramble until the eggs are ready to eat.
  8. This are a great combination with some smashed refried beans, with sour cream.
