International Egg Recipe #6: Lazy Breakfast Casserole

This is a favourite from Tennessee

  • 1 lb. ground turkey sausage or regular hot or mild sausage
  • 8 eggs
  • 1 med. onion, chopped
  • 5 tbsp. sour cream
  • 1/2 c. med or hot salsa
  • 8 oz. Velveeta cheese
  • 2 c. Cheddar cheese, shredded
  • 2 c. Mozzarella cheese, shredded
  • Salt and pepper to taste
  • Dash of Garlic
  • Dash of Cayenne

Saute sausage, onions, garlic & cayenne with salt and pepper. Drain well. Combine eggs and sour cream in blender for a minute or two (OR just beat frantically). Put all ingredients in a bowl to mix them up. Transfer mix to a greased 9 X 13 and bake for 40 minutes at 300 degrees….

Serve with salsa and sour cream on the side for dipping and extra flavor.
